For more than 60 years, the Hedary family has shared the flavors and traditions of Lebanon through recipes passed down from generation to generation. Now, that legacy continues in Las Vegas with the opening of a new Hedary’s Mediterranean location, where guests can experience authentic Mediterranean cuisine rooted in family history, hospitality, and craftsmanship.
Hedary Family History
The family’s connection to Las Vegas dates back more than two decades. In 2004, Frank Hedary opened the family’s first Las Vegas restaurant, earning multiple awards before eventually returning to Texas. Two years later, daughter Mariz Khoury established Khoury’s Mediterranean Restaurant in Las Vegas, where her son Christian now continues the family tradition.
In February 2026, the Hedary family officially returned to Las Vegas with the opening of the newest Hedary’s Mediterranean location under the leadership of Khoury. The restaurant represents the family’s culinary heritage and a celebration of the resilience that carried the Hedary family from Beirut to Texas and now back to Las Vegas.
Today, Hedary’s remains more than just a restaurant. It is the story of a family whose recipes, traditions, and passion for hospitality have endured across generations and continents.
At the heart of the restaurant is an open kitchen that gives diners a front-row seat to the culinary process. Fresh pita dough is rolled by hand, baked on-site, and served warm directly to the table, a nod to the traditional techniques that have defined the Hedary family’s cooking for decades.
What to Order at Hedary’s Mediterranean
Every dish begins with exceptionally fresh ingredients, bringing bold Mediterranean flavors to life in every bite. From crisp vegetables and fragrant herbs to house-made dips and perfectly seasoned proteins, the menu is crafted with quality and authenticity at the center. Guests can start their meal with lentil soup or enjoy a spread of classic Mediterranean favorites like creamy hummus, smoky baba ghanoush, rich labni, and crispy falafel. The Mediterranean cheeseboard offers a refreshing combination of grilled halloumi, feta, tomatoes, cucumbers, and olives, while stuffed grape leaves provide a traditional touch. For something indulgent, Hedary’s Fries are topped with savory beef shawarma, crumbled feta, and a sprinkle of sumac for the perfect balance of flavor and texture.
The bowl selections are hearty, satisfying, and packed with vibrant ingredients. The Shawarma Bowl features tender chicken or beef shawarma layered with onions, tomatoes, and tahini sauce for a bold and savory experience. The Hummus Bowl combines silky hummus with your choice of chicken, beef, or lamb, along with roasted red peppers and crispy fried potatoes. Guests seeking a lighter plant-based option can enjoy the Vegan Bowl, filled with falafel, grape leaves, hummus, cauliflower, avocados, cucumbers, and red peppers for a colorful and nourishing meal.
Freshness continues throughout the salad offerings, each made with crisp vegetables, herbs, and house-inspired flavors. The Greek Salad delivers a classic Mediterranean combination of tomatoes, cucumbers, olives, and feta, while Hedary’s Salad adds avocados, garbanzo beans, and walnuts for extra richness and texture. The Tabbouleh Salad blends fresh parsley, mint, red onions, radishes, toasted pita, and sumac for a bright and refreshing flavor profile. The Lebanese Salad keeps things simple and vibrant with tomatoes, cucumbers, red onions, mint, and lemon, creating the perfect complement to any entrée on the menu.
The wrap menu combines bold flavors with fresh ingredients for a convenient meal. The Garlic Chicken Wrap features juicy chicken breast layered with creamy whipped garlic sauce, pickled cucumbers, and crispy fries wrapped inside for added texture and flavor. The Lamb Gyro Wrap combines seasoned lamb with onions, lettuce, tomatoes, and house-made tzatziki sauce for a classic Mediterranean favorite. For a vegetarian option, the Falafel Wrap includes crispy fried garbanzo bean falafel, fresh herbs, vegetables, and house-made pickles wrapped together.

Hedary’s Mediterranean is open Monday to Thursday, from 11 a.m. to 8 p.m.; Friday and Saturday, from 11 a.m. to 9 p.m., and closed on Sundays.
