We slow-roast pork belly for 8 hours with herbs and spices, slice it thick, and pile it onto warm ciabatta. Then comes bright house-made salsa verde, peppery arugula, tangy pickled red onions, and a shower of crispy chicharrons because apparently pork needed more pork.

We swapped the stracciatella for fresh mozzarella marinated in our house-smoked oil, then stacked it with fresh tomatoes, pesto, balsamic glaze and extra virgin olive oil on toasted ciabatta. Creamy, bright, a little smoky and definitely not your average Caprese.
