This raw wakame seaweed salad has been one of my favorites for over 25 years. It’s also one of the recipes I served at my first raw vegan restaurant in Atlanta.

Wakame is naturally rich in iodine and also contains minerals including calcium, magnesium and iron. You can find dried wakame at almost any Asian market.

Wakame Seaweed Salad

5 oz dried wakame seaweed
Water, for reconstituting
¼ cup fresh lemon juice
¼ cup sesame oil
3 tbsp fresh garlic, minced

If you want the wakame chopped fine, pulse it in the food processor first, then reconstitute it in water. If you prefer larger pieces, reconstitute it as is.

Drain well, then toss with lemon juice, sesame oil and garlic.

My very first restaurant was a raw vegan spot in Atlanta called Everlasting Life. This was back in 2000.

I actually learned how to prepare raw food before I learned how to prepare cooked food. I learned about the healing benefits of raw food. Nothing is heated over 115° so when you eat raw, your body gets all the nutrients and minerals from the ingredients.

I’ve been getting back to my roots with my raw recipes and am excited to share them with you. Let me know your thoughts on this veggie wrap. 🌱

1. Take the SDX bus from anywhere on the Strip or downtown Las Vegas.
2. Get off at the "SLS Station" stop.
3. Transfer to the Deuce bus heading northbound.
4. Get off at the "Las Vegas Blvd/North Main St" stop.

Directions to N. Las Vegas Boulevard in North Las Vegas by car:

1. From downtown Las Vegas, head north on I-15.
2. Take exit 45A for Washington Ave.
3. Turn left onto E Washington Ave and continue for about 2 miles.
4. Turn right onto N Las Vegas Blvd.

Parking options:
- The restaurant may have its own parking lot or designated spaces nearby, which can be found by using a GPS or map app.
- There may be street parking available on N Las Vegas Blvd or side streets, but please be mindful of any posted parking restrictions or time limits.
- If street parking is not available, there are several paid parking garages in the area, including at the nearby Plaza Hotel & Casino and Fremont Street Experience, both located a few blocks away from N Las Vegas Blvd.
