Food truck success doesn’t happen overnight.

A lot of it is trial and error. Pulling up to events that weren’t worth it. Prepping too much. Not prepping enough. Pricing something wrong. Having an item that tastes 🔥 but takes way too long when 50 people hit your window at once.

Every event teaches you something.

You start learning that the same menu doesn’t work everywhere. The same pricing doesn’t work everywhere. What works at a festival might not work at a school event. What works for 100 people might completely fall apart when you’re trying to serve 1,000.

Pay attention to EVERYTHING.

How much you sold. What sold first. What barely moved. What time the rush came. How fast you could get orders out. What you ran out of. What you took home.

Then adjust the next time.

After enough events, you start knowing what to bring, what to charge, what to leave off the menu and how much your setup can actually handle.

There’s no cheat code.

Just reps, mistakes, paying attention and getting a little better every time.

Eventually what used to feel like chaos starts feeling like a system. 🌮📈

Lately we’ve been feeling more and more love from this city.

We don’t get a ton of shoutouts but somehow, you guys keep finding us, telling your friends, reposting us, coming back and showing up.

For a small family-owned business, that means more than you know.

Vegas continues to show up for Birria Bros, and we’ll keep doing everything we can to make it worth the visit.

To get to the location, you can take the RTC bus route 203 and get off at the nearest stop. Alternatively, if you are driving, take the I-15 freeway and exit at Tropicana Avenue. From there, head west until you reach the intersection with Decatur Boulevard. The restaurant is located on the corner of Tropicana and Decatur, with parking available in the adjacent lot.
