Every Tuesday and Thursday, John Mull’s Road Kill Grill serves up Tri Tip that’s worth planning your week around.
🤔 So what’s the deal with Tri Tip?
Tri Tip is a triangular cut from the bottom sirloin that’s known for being flavorful, affordable, and great for feeding a group.
It actually has roots in California, popularized in the 1950s in Santa Maria, where local butchers began preparing and grilling it as a specialty. What was once an overlooked cut became the centerpiece of Santa Maria–style barbecue.
Want to cook your own? Swing by the Meat Market and pick one (or two) up!
For best results: season with salt, pepper, and garlic, cook to medium-rare, and let it rest before slicing. The most important step is cutting against the grain… the grain changes direction midway, so adjust your knife as you go.
Done right, it’s tender, juicy, and one of the most underrated cuts of beef. 🔥

For those traveling to Thom Boulevard in Las Vegas, there are several ways to reach the area. If using public transport, there are several bus stops within walking distance of Thom Boulevard that can be accessed by taking either the 105 or 207 bus routes.
For those driving, take I-15 north to exit 48 for Cheyenne Avenue. Head west on Cheyenne Avenue until you reach Thom Boulevard and turn right. The restaurant will be located on your left-hand side.
Parking options include a small lot next to the restaurant or on-street parking available nearby. Please note that parking may be limited during peak hours.
