This pale steak was not my creation. It was courtesy of a well known eatery chain. The reason why I’m showing you this is because during the writing of my business plan I had to explain my qualifications as a cook. I had to pour my heart and soul on paper to illustrate why my business will be successful. Meanwhile chains with money can set up and do well with bad food. My hurdle is money but their hurdle is passion in the kitchen of which I have plenty of. I ordered my steak based off what I saw on the menu and I was bamboozled. I hope never to do this to a customer.

When you grow up eating Central American food, American comfort food is such a treat. I was first introduced to Chicken and Dumplings at a Cracker Barrel in Dallas. Although we have a Cracker Barrel or two in town now it’s hard to get in and out in under an hour. So I grabbed my Southern cookbook and made this treat in under an hour. It’s no Cracker Barrel but it’s yummy.
