Beef Birria Style

Meats:
Diezmillo 8lb. --- Cut it 3.5"x3.5" Cubes
Chamoros 2ea
Bone Marrow Bones 3ea
Prime meat with 1 cup of oil your preference and place into your baking pan.

Dry rub:
Mexican Oregon 1tbls
Salt 1tbls
Onion powder 1tbls
Garlic powder 1tbls
Smoked paprika 1tbls
Knorr chicken 2tbls
Knorr beef 2tbls
Ground Coriander 1
Ground Cu**in 1
Mix and coat all meat well add bay leaves and fresh epazote into your baking pan.

Mix blend 1:
Red onion 1ea
Roma tomatoes 3ea
Garlic 2oz
Chipotle in Adobo 3ea
Salt 1tbls
Ground Coriander 1
Knorr chicken 3tbls
Knorr beef 3tbls
Blend all ingredients and pour them into your baking pan.

Mix blend 2:
Dry chile guajillo 12ea
Dry chile ancho 3ea
Dry chile chipotle 2ea
Dry chile Morita 4ea
Salt 1tbls
After blanching your chili allow it to steep for 20min, clean, and remove all seeds. Blend well on high for 1min 30sec pour mixture into the strainer and incorporate it into your baking pan. Add one Coca-Cola can of soda into the mix. Add 32 Cups of clean water.

Preheat your oven to 375 degrees.
Cover your baking pan with a lid and foil.
Place in the oven for four hours and cook to a tender pull so that the meat falls apart.

First, check-check 2 hours into the cooking process. Check at the 3-hour mark and final check-check at 4 hours. If it needs more time give it 30min additional till the desired consistency is achieved.

Taste for the final flavor, and add salt T.T.

If you are looking to get to E Carson Avenue in Las Vegas to visit a Mexican restaurant and a taco restaurant, there are two options for transportation:

Public Transport:
You can take the bus lines 109 or 207 and get off at the E Charleston Boulevard and S 10th Street stop. From there, you will need to walk eastward towards Downtown Las Vegas until you reach E Carson Avenue.

Driving/Parking:
If you are driving, take the I-515 N/US-93 N/US-95 N towards Downtown Las Vegas. Take exit 75B towards Eastern Ave/Main St, then keep left at the fork and merge onto N Mojave Rd. Turn right onto E Charleston Blvd, then turn left onto S 10th St. Finally, turn right onto E Carson Ave.

Parking is available along E Carson Avenue or you can park in one of the paid parking lots nearby.
